Forty years ago, when Ben & Jerry's opened its doors on May 5, 1978, the ice cream market in the United States didn't look like it does today. Actually, Ben Cohen and Jerry Greenfield who live in Long Island, New York. Ma grew up together, at the forefront of the super premium ice cream trend, which was small but growing.
And, although they seem to have accidentally stumbled upon ice cream, they had a wonderful time. In the following years, they and their friends changed the taste of American ice cream. The super-premium ice cream market, which uses mostly natural ingredients, uses less air to churn (which makes the ice cream thicker) and has a higher fat content, was then led by Häagen-Dazs, which was already a leader in the field.

The company was founded in 1961 and opened its first store in 1976. But the leadership in the luxury ice cream segment was not the leader of the entire market, as TIME wrote in a 1981 ice cream article. In 1980, Haagen-Dazs produced 40 million pints (about 5 million gallons), which was only a fraction of the total US ice cream production of over 829 million gallons.

The 1979 figures also provide some context: in the $1.6 billion industry, Dart & Kraft (the maker of Siltest and Brayers) had the largest market share at 12.2%, followed by Borden at 9.3%. Lever Brothers (Good Humor) came in seventh with 2.3% of the market.
Together, the most expensive brands of ice cream account for only 11% of the total market. But higher priced, better tasting brands were gaining momentum: while overall ice cream sales were up just 1% year on year, the luxury segment was up 17%. Cohen and Greenfield didn't originally plan to be big leaders in super premium ice cream.
But Cohen didn't have much luck selling his glassware, and Greenfield was turned down by medical schools, so they agreed to open a shop together. They registered their business in 1977, initially thinking about opening a bagel shop. When the cost of bagel equipment became too high, they instead invested in a $5 course at Pennsylvania State University on ice cream making (which was known to be attended by ice cream makers of all sizes).

With $4,000 each, including help from Father Cohen, who paid his half share, and another $4,000 from a bank loan, they set about refurbishing a gas station in Burlington to suit their needs. Both were 27 years old when it opened in May 1978, early summer.
But because Vermont wasn't always a climate-friendly frozen dessert shop, Ben also made pancakes, soups, and other dishes, while Jerry was in charge of the ice cream. In 1979, they gave up other food - ice cream was a success, but pancakes were not so good.

From the beginning they focused on heavily flavored, large and creative ice cream because, as Cohen said in a 1994 New York Times interview, “I never had a good sense of smell, and if you don’t have it, you have a bad sense of taste.”
