I'm not sure what app to choose besides Qualtrics in my workflow... One app that I know will do this for you is Tango Card, even though you have to pay for their services.

Scanning File For Viruses.
Another way you can do this is to create a list of existing gift card codes (ie buy some in advance) in something like Google Sheets. When someone has a new survey answer, you can check for the next available discount code in the list and send it via email (for example, using the Gmail Send Email action).
Does any of this sound like a good fit for you? I'm happy to look into the other option if that sounds good :) If you go the Google Sheets route, since it depends on you buying enough upfront (and therefore buying more if you run out), it will also
add a formula to the Google Sheet that performs the MOD() operation to determine if it's time to order more. The exact formula will vary depending on how many you buy at once and how quickly you distribute them, but let's say you buy 100 and want to buy more after you've used up 95. The formula would be =MOD
ROW(), 95) . You can then add a filter step to your Zap that only continues if the column is 0 and then sends you an email reminder or adds a task to your to-do list to buy more. If you want to go the fully automatic route without having to buy gift cards yourself, I prefer to use Giftbit.

Suppose you offer respondents an incentive to complete your survey; for example, a chance to win one of four $25 gift cards. Your survey promises respondents that their answers will be anonymous; however, you must obtain some identifying information about them in order to distribute the incentives, whether it is an email address (if you send a digital gift card code) or a physical address (if you send a physical gift card).

To collect respondent information and keep survey responses anonymous, create two surveys: your "real" survey and a second "incentive" survey that collects only the information necessary to deliver the incentive to participants. In this way, survey responses and contact information are stored in two separate "pools" and will not be linked to each other.
Edit (June 2020): Researchers implementing this approach should be aware of the potential for abuse by individuals attempting to complete the incentive survey more than once. We have added an extra step to these instructions (step 1.3) which will limit access to the incentive survey to only those people coming from the "main survey".
In other words, sharing the incentive survey URL will prevent individuals from directly reaching the incentive survey.) This may not completely prevent abuse, but implementing this step will only allow access to individuals referred to your "primary" incentive survey. We also recommend that researchers review Qualtric's Survey Protection Options page.
Find the Add Referral Site URL option (formerly called "HTTP Referrer" or "HTTP Referral Verification" and switch its setting to On. Delete the contents of the text box that appears, then copy and paste your primary survey URL into the box. ( If you still haven't published your main survey, your main survey won't be assigned a URL. You'll need this URL to complete this step. If you haven't finished setting up your main survey yet, you can temporarily publish it just to get its
URL, and then unpublish the survey to continue working on it.) After you finish configuring the branch logic, the Survey Flow window should look like this:
