Although many Vosges chocolates contain unusual ingredients in unexpected combinations, they are actually very easy to eat. For example, I'll admit that the sage mushroom and Italian hazelnut truffle was a bit intimidating to bite into, but it translated into a delicious umami milk chocolate ganache with a hint of walnuts that left me wanting more.

Each bite of Vosges Haute Chocolate is truly thrilling to bite into, like opening another surprise: the gift that keeps on giving. Ganache. You have encountered the term countless times on menus describing chocolate desserts. Ganache is a decadent combination of cream and chocolate used to glaze cakes, glaze donuts and fill truffles.
A traditional truffle is a simple chocolate shell or round shell with a coating of cocoa powder, nuts or coconut. But the world of candies filled with sugar cane does not end there. Our favorite truffle and ganache maker, Bon Bon Bon, is unconventional in the way they use and package the shape, taste and texture of their truffles.
When choosing a good truffle, you should pay attention to a few key features: First, it must have an even, thin skin that fills the cane. Too thick a layer of chocolate breaks when cut and breaks up the delicate lumps. Second, it must have a shiny exterior (unless coated with cocoa powder, etc.), without defects or white "bloom" (a sign that the chocolate has not been properly handled during production or storage).
In the end, the inside of the truffle should have a silky smooth lump. Bon Bon, a hip and sassy producer from Detroit, hits all of these and then some. Each truffle is a two-bite masterpiece presented in a decadent rectangular chocolate shell. Instead of carving their ganache completely, Bon Bon decided to leave their candies on top without any – which was a very risky move.
