And returned on its own, but later. The main questions about this card sound like: why does it happen and how to prevent it from happening. When the enchanted creature dies, return the card to the battlefield under its owner's control. At the beginning of the next end step, put Blessing of Immortality back on the battlefield attached to this creature.
To begin with, I want to say a few general words about this card. Gift of Immortality is a white aura with the static ability "Enchant Creature". We know almost everything about Auras, if you don't know or have forgotten, check out the link, read it and go back.
Gift of Immortality's second ability triggers. This is where the fun part begins. "When the enchanted creature dies, return the card to the battlefield under its owner's control. At the start of the next end step, put Gift of Immortality back onto the battlefield attached to that creature."

Let's say you used Immortality The gift enchanted mob isn't exactly a mob. It is an animated land, artifact, or plane walker. If put into a graveyard, anything "animated" immediately ceases to be a creature. Why would Immortal Gift find this card and bring it back to the battlefield?
Ability Tracking Card. But the card changes region, it's a completely new object! Admittedly, it is new, but here we have an exception. 400.7. An object that is moved from one region to another becomes a new object with no memory, or relationship, to its previous existence.

There are seven exceptions to this rule: 400.7d Ability that triggers when an object moves from one area to another (eg "When Rancor enters a graveyard from the battlefield") can find the new object it spawns when the ability triggers . zone to move to, if the zone is a public zone.
Since the graveyard is public property, Blessing of the Immortal's abilities keep track of which items were enchanted while Blessing of the Immortal was on the battlefield. This means that all of these cards have a chance to return when Blessing of the Immortal's ability resolves.
If the triggered ability resolves, what's going to stop the card from coming back? Tokens that leave the battlefield disappear the next time an SBA is performed. There is absolutely no chance of bringing them back to the battlefield with the gift of immortality or anything.
If the crafty opponent sends the card from the graveyard before the triggered ability resolves, the ability will pay nothing. If you return a creature with immortals and immortals from the graveyard to the battlefield before the triggered ability resolves, and it somehow ends up in the graveyard, it becomes a brand new Blessing of Immortality that cannot be returned object.
The ability triggers when an enchanted creature dies. Then, when SBA is performed, the Gift of Immortality follows the creature itself, as it is a separate aura on the battlefield. Only after that are the flip-flops placed on the stack. There may be multiple abilities waiting to be put on the stack at any given time.

603.3b) If multiple abilities have triggered since the last time a player gained priority, each player, in APNAP order, places the triggered abilities he or she controls in whatever order he or she stacks. When Emrakul, Rend Aeons hits a graveyard, its own ability will trigger.
If you put it on the stack last, there won't be Emrakul in the graveyard when the Blessing of the Immortal ability resolves. In fact, there will be nothing in the cemetery. At the start of the next end step, the delayed ability triggers. When it resolves, return Gift of Immortality from the graveyard to the battlefield and attach it to the card that was its enchanted creature.
This only happens if we have the same object that was sent back to the battlefield by Gift of the Immortal's triggered ability. Do you remember the zone change card with Undying? It is equally important here. Even if it is the same physical card that has visited a different area, it is a completely new object that the delayed trigger does not know about.
If an object changes properties or state, it is still the same object and the exposed ability will find it. If you have a clone enchanted by Gift of Immortality, it can turn into a copy of another creature when it returns to the battlefield.
It is still the same object tracked by the exposed ability. If you return a double-sided card from the graveyard, and that card has already been transformed when the delayed ability resolves, the ability is acceptable. If Gift of Immortality can legally enchant the current face-up card, it will be attached to it.
