Then, the whole mess gets a layer of lye to infuse that extra pretzel flavor. They're crispy and soft, salty and sweet, and Andrew "keeps telling people how much they need to try." You can't go wrong feeling the enriched soft bread into a loaf and swirling it with chocolate.
That was before Nutella got involved. When I mentioned babka on this list to my colleagues Maggie Hoffman and David Tamarkin in a separate conversation, they were all excited. Their eyes were clouded as they gazed at the horizon, each remembering a primal babka moment from the past.

Salt Lake City's Les Madeleines specializes in Kouign Amann, a layered pastry from Brittany in northwestern France. With croissant-like layers of butter, rich dough and crisp sugar that caramelizes and sticks in places and stays crunchy in others, chef Romina Rasmussen says it's a salted caramel lover's pastry.

While I also have to recommend their Coconut Chess Piece as a thing of beauty, it's this chocolate version that keeps me dreaming. A typical panettone is concentrated, leavened, and filled with dried and preserved fruits. They're pretty good (Roy even has a more traditional one, if that's your thing).

But my colleague Maggie "didn't care about panettone" until she tasted Roy's chocolate-caramel-pecan version. She has "never seen people intimidated by panettone - even going online and trying to score it and eating dessert," as she did when she bought her first panettone at a dinner party.
She has since bought several more, and says it's "very rich, soft, moist, and really special." Black Seed Bagels may be from New York, but they don't have to be. Instead, executive chef Dianna Daoheung borrowed techniques from Montreal to create a hybrid bagel that embodies the best aspects of its predecessors.
